The Calabrian peppers are slowly dried in the shade in southern Italy
This traditional whole-pepper natural drying process takes 1-2 months, compared to the chopped-chili industrial process (max. 24hr.) This slow step is key to preserving the peppers’ delicate earthiness
In order to obtain a layer of bright, high-toned citrus as well as umami, they lacto-ferment fresh cayenne peppers.
Stuzzi is a blend of both fresh and dried peppers
No added preservatives, artificial colors, sweeteners or thickening agents

Stuzzi was born during an Alpine road trip, when tequila-&- wine-makers Richard &Carla Betts met chefs Ethel Hoon & Jakob Zeller. That night over drinks, they bonded over a shared love of travel, bold food, & fiery spice. With roots in North America, Singapore, & Italy & more than 50 years in restaurants between them, they set out to create a hot sauce to elevate cuisines across the globe. Stuzzi officially launched in 2024.
